We chat with Megan Cooper, founder of online bakery White Pineapple.

Where are you from?

I was originally born in Bloemfontein, South Africa. I grew up in Victoria, BC and now I call Vancouver home.

 

What is White Pineapple and how did it start?

White Pineapple is going to be an online bakery that offers custom cakes, sugarcoated catering, and a variety of the yummiest baked goods.  We will offer our services to all of Vancouver and Victoria, BC. 

 

 
 

 

What are some of the biggest challenges in running a start-up catering business?

The biggest challenge that I am facing is how to focus in on a specific concept for a menu and flavor ideas. I am a very creative individual – narrowing it down is quite difficult for me.  I am constantly thinking of new ideas for the website, not a bad thing, but it can definitely slow down the process.


Another big challenge is setting everything up online. I am savvy in the kitchen, definitely not tech savvy. I am so lucky to have friends and peers that have been a huge help in the process of starting up an online presence.

 

 
 

 

What’s your process like when creating and testing out new recipes?

I get a lot of my inspiration from old-time family favorites. I’ve spent a lot of time in Costa Rica, so I always tend to sway towards tropical, light flavors. I also get a lot of ideas and inspiration from other delicious Instagram accounts.


When I am in the kitchen coming up with ideas, it’s whirlwind. Sometimes it works out, sometimes it doesn’t. But at the end of it all, I am a happy baker and I always learn something new.

 

 

I noticed that even though all your recipes are super decadent and drool worthy, many of your ingredients are still very health-conscious, like organic vanilla and local fruit.  How would you describe your philosophy when it comes to baking?

I am a big advocate for using good, pure, and local ingredients. However, I want my creations to be as delicious as possible, and sometimes that means using sugary “not so good for you” treats. Life is short, and if you are going to eat something sweet and delicious, go all out.


For custom cakes and catering, we will work around client preferences; whether it’s gluten free, organic, or if they are on a budget.

 

 
 

 

Who is your biggest food inspiration(s)?

Oh boy, very difficult question. There are so many people out there providing me with endless inspiration. The food culture is out of control at the moment, I get inspiration from everywhere.

 

Amy Schumer invites you to her party and asks you to prepare a round of desserts.  What are you going to make?

Hahaha, I would probably whip up something tangy, maybe a boozy dessert. I would add some funny toppers to some cupcakes. I recently spent hours hand sculpting tiny penises out of fondant for cupcake toppers – I think she would appreciate that.

 

 

Who do you like to listen to when you’re working in the kitchen?

It varies; I usually like to listen to rap/hip hop or “electronic” music when I’m working in the kitchen. I have been super into the new Jamie XX album.

 

What can we expect next from White Pineapple?

The launch of our website! Once we have launched, we will get the blog started. In the meantime, you can still order cakes and desserts!

 

What creeps you out the most?

Snakes and scorpions, I hate them with a passion.
